Birthday Cake for My Husband
Tomorrow is the birthday of my husband. Robert has always been fond of homemade cakes and that’s why I decided to prepare a birthday cake by myself. After all, it’s a special occasion to celebrate! It’s worth doing it with a healthy and just as tasty dessert. Your loved ones will surely appreciate such goodies much more than a ready-made cake from a pastry shop. And you won’t will feel guilty if you have one piece too many.
Preparation:
Prepare the cake base according to this recipe for a gluten-free cake. Pre-heat the oven up to 180℃ and prepare a round cake tin with a diameter of 20 cm. Melt the butter and chocolate in a pot over low heat, stir in the vanilla extract. Take the pot off the heat and add the cocoa and a pinch of salt. Stir well. Whip the eggs with powdered sugar. Gently transfer the whipped egg whites into the melted chocolate and delicately combine while adding whole raspberries. Transfer the mixture into the tin lined with baking paper and bake at 160℃ for about 50 minutes, until the top of the cake is dry. Place the cake into a cool place. Melt chocolate in a pot with coconut sugar and a bit of coconut oil. Coat the cake and wait until the coating cool down. Refrigerate and decorate with pomegranate seeds before serving.
