An alternative to cheesecake – Chocolate Covered Millet Cake with Raisins

I’ve been trying to show you that it’s possible to eat sensibly, even at Christmas. Healthier and more nutritious options are just as tasty! If you always prepare cheesecake, you must try this recipe 🙂

 

Preparation:

I whipped the eggs with coconut sugar. Then I blended all the base ingredients and put it into a round baking tin lined with baking paper. I baked the base at 180°C for about 10 minutes.

I rinsed the groats once or twice in cold running water, then cooked it following the recipe on the packaging and let it cool. Next, I added the coconut milk and the other ingredients and blended it all. I tossed in the raisins and stirred. I transferred the filling onto the baked base and baked the cake at 180°C for about 50 minutes. Then I let it cool in the oven.

In the end, I drizzled melted chocolate over the cake and refrigerated it overnight.
