Bilberry Pudding

We usually serve bilberries from mid-June until the end of July. The fruit have a delicious and refreshing flavour. It is worth remembering that apart from their great taste, bilberries are a valuable source of health-promoting compounds. They contain a lot of vitamins, such as vitamin C, PP, B vitamins, pectin, as well as minerals, such as calcium, phosphorus and potassium. They are also a valuable source of anthocyanins with antioxidant properties. What is more, research results have shown that the substances contained in berries play an important role in counteracting numerous diseases, such as: cardiovascular diseases. They also have a beneficial effect on our eyesight.

Thanks to their numerous health properties and great taste, it’s a real pleasure to use them as an addition to cocktails, porridge or desserts. I also use them to prepare jam and juice. Today, however, I would like to show you a recipe for a delicious bilberry pudding.

 

Preparation:

I cooked the groats in almond milk, mixed in the coconut sugar and cinnamon. I left the groats to cool and blended it with the coconut paste, blue spirulina (but you can also use the green version). At the end I decorated the pudding with bilberries.
