Carrot and coconut omelette

Autumn is here and so the recipe is in the autumn shades. Today the omelette is in a bit sweeter version, but with no sugar added. Coconut and carrot make for a great combination! I spiced it all up with a good dose of warming spices. Check it out for yourselves 🙂

Preparation:

Peel the carrot and grate it. Mix the eggs with the flour, plant milk and spices. Add the carrot and stir. Pour the mixture onto the pan with warm coconut oil and cover. When it firms up, flip it over. Then fold it over in half and slide on to a plate.
