Christmas Apple Pie
I know I’m teasing you with this recipe but it’s just not an ordinary apple pie!
It’s not the first time I’ve debunked the myth that delicious holiday sweets are unhealthy! Yes, my Sweethearts! It may sound like I’m showing off but this cake is not only yummy but also easy to make – even a beginner can manage ?
And the smell of cinnamon…
INGREDIENTS (DOUGH):
- 150 g cornflour
- 150 g rice flour
- 100 g potato flour
- 200 g coconut oil
- 100 g coconut sugar
- 4 egg yolks
- 1 teaspoon gluten-free baking powder
- 1 teaspoon cinnamon
- 3 pinches of sea salt
- almond flakes (for decoration)
- powdered xylitol (for decoration)
INGREDIENTS (APPLES):
- 6 big apples
- 3 tablespoons coconut sugar
- a pinch of cardamom
- a pinch of cinnamon
PREPARATION:
Combine the ingredients for the dough: the flour, oil, yolks, coconut sugar and baking powder.
Refrigerate the dough for about 1,5 hours.
Grease a round cake tin and line it with half the dough.
Peel the apples, core them and slice.
Put them into a pot, add the spices and sugar. Pour in a little water and stew until soft.
Then transfer them into the cake tin.
Grate the other half of the dough and place it over the apples.
Top the cake with almonds and powdered xylitol.
Bake at 180°C for about 40 minutes.
You can leave the cake in the oven to cool.
