Fluffy Christmas Banana & Carrot Cake with Spices
Many people are afraid their Christmas pastries will fail or will be time-consuming… That’s why I would like to share with you today an easy and quick recipe for a Christmas cake with bananas and carrots. I also added some spices to give it some more Christmassy flavour and magic! 🙂 I can guarantee that even beginners can make it. Your loved ones will certainly appreciate home-made sweets.
Preparation:
The cake:
I grated the carrots on big holes, blended them with the bananas. Then I blended soaked dates and the yolks in a separate bowl and beat the egg whites until stiff in yet another bowl. Next, I combined all the ingredients, added the raisins rinsed in hot water. I lined a loaf tin with baking paper and baked at 180°C for about 30-40 minutes, and checked the cake is done with a toothpick.
The glaze:
I melted the chocolate in a pot with some sugar and coconut oil. I poured the glaze over the cake and sprinkled it with some crumbled cookies.
