Christmas Millet Pudding

I have an idea for Christmas breakfast or a snack for you and it’s millet pudding with some apple, plums and spices. I can hardly imagine Christmas without spices 🙂 They have this extraordinary, unique taste and smell which I associate with Christmas. They also warm us up and that’s why I add them to my meals throughout winter. But still, it is during Christmas when I use them to the full 🙂 Spices include, among others, cinnamon, cardamom, nutmeg or cloves.

 

Preparation:

I rinsed millet groats once or twice under cold, running water and cooked it in plant milk following the recipe on the packaging. At the end, I stirred in the coconut sugar. Next, I peeled and diced the apple, halved the plums and put them on a baking tin lined with baking paper. I baked them in the oven for about 15 minutes at 180°C. Then I blended all the ingredients and sprinkled the pudding with Cranberry Lio Shake which gave just the perfect slightly sour taste.

You can also caramelise the fruit in a pan – just melt some oil, add coconut sugar and then stir in diced fruit and stew for 2-3 minutes on each side.
