Christmas Sweet Bread? Why not!
I have prepared lots of Christmas recipes for you, both sweet and savoury ones. How about banana bread? It’s great for Christmas breakfast and as a side dish for your Christmas dinner. You must have a try! 🙂
INGREDIENTS:
- 200 g fresh dates
- 400 g gluten-free oat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 vanilla bean
- 1 1/2 teaspoon Himalayan salt
- 270 g clarified butter
- 200 g coconut sugar
- 2 eggs
- 4 bananas
- 90 g walnuts (soaked overnight and then oven-dried)
PREPARATION:
Soak pitted dates in hot water for 15-20 minutes, then blend.
Combine the flour with baking powder and soda, vanilla seeds and salt.
Mix the clarified butter with coconut sugar and eggs, then add mashed bananas and chopped nuts.
Mix the dry and wet ingredients, transfer the mixture into the baking tin and bake at 160°C for about 80 minutes.
