Blueberry cake
Today, gluten-free sweetness – a blueberry cake. I like those dark blue berry fruits a lot, their flavor and aroma that reminds me of the woods.
I remember trips to the woods in my childhood in search for those small balls hiding cleverly from us – little berry pickers 🙂
Blueberries are healthy. A kilo of them contains: 5.82 g of protein, 132 g of carbohydrates and 291 g minerals such as calcium (7.5 mg), iron (7.18 mg), copper (1.10 mg) and phosphorus (88.3 mg). Blueberries contain vitamins A, B1, B6, B2, C and B3 (Niacin).
Ożarowski says: Fruits of Vaccinium myrtillus are common in treating diarrhoea here in Poland. Tannins included in them destroy pathogenic microorganisms or inhibit their development, even those resistant to antibiotics. Tannins reduce the permeability of the intestinal mucous membranes as well as gradually stop expelling liquid stools, thanks to which they prevent excessive dehydration of the body. Moreover, tannins bind bacterial toxins in diarrhoea as well as heavy metals salts in case of being poisoned by them. With both types of toxins, tannins form insoluble complexes and inhibit their absorption. All those properties of blueberries mentioned above contribute to the considerable reduction of the inflammation of the mucous membranes of the intestines, blocking minor bleeding from capillaries, reducing body temperature and relieving abdominal pain as well as nausea.
We can enjoy fresh blueberries only in the summer. Fortunately, we can dry them or freeze and they do not lose their valuable properties during those processes.
I mixed all the ingredients together. Next I greased a baking tin with clarified butter. I baked it for 25 minutes in 180°C . Meanwhile, I made date cream:
I cooked dates in milk and melted chocolate (you can add cocoa instead of chocolate). I mixed it all and blended.
I used blueberries to make mousse. I blended one cup of blueberries with a tablespoon of xylitol and cooked it for a while and adding a vanilla pod. I stirred the mousse into the date cream adding a handful of whole blueberries. I put this mixture on the pastry and spread it. I added a little more fresh blueberries. In the winter you can use homemade blueberry jam.
