Coconut and Vegetable Beef Stew
On Women’s Day I wish you all the best: stay healthy, happy and may your dreams come true. Remember to appreciate yourself and enjoy each day. Here’s my suggestion for tonight’s dinner. I think that it can be a great gift for everyone and even those with no culinary passion can handle it. Remember to use lots of aromatic spices: turmeric, ginger, and cinnamon. Preparation:
I cut the meat into strips, cubed the sweet potato and pepper, and sliced the zucchini. Then I heated the clarified butter in a deep frying pan. I fried the finely chopped garlic and meat. I added the vegetables and fried it all for a few minutes. Then I poured in the coconut milk, added the spices, dried tomatoes cut into strips and stewed it for about 10 minutes.
I sprinkled the dish with chopped dill and basil 🙂
