Cold Kefir Soup
When the weather gets warmer, I introduce more light, simple snacks to my menu. One of such dishes is cold soup, the base of which can be unsweetened yogurt, kefir or buttermilk (if you avoid dairy products, choose vegetable yogurt) and fresh vegetables. It tastes best when refrigerated 😉
Preparation:
I grated the cucumber and the radishes, pressed the garlic clove and chopped the chives. Then I mixed the vegetables with the kefir and seasoned it with salt and pepper. I sprinkled the soup with almond flakes before serving 🙂
