Creamy Tomato Soup
Chilly temperatures outside make me want to have warming soup more and more often. This recipe is a great idea for a quick lunch or a light dinner, especially if you like Italian cuisine with tomatoes, fresh basil, and olive oil. Do you also associate these flavors with summer and holidays? I hope so and I’m sure cooking this soup will remind you of the pleasant summer moments 🙂
Preparation:
I blanched the tomatoes, peeled them and cut into smaller pieces. Next, I cut the pepper into half, removed the core and roast it until soft. I put the pepper and the tomatoes into a pot, gradually added the stock and blended until it was creamy. At the end I added the herbs and spices, heated it for a while and stirred in the fresh basil leaves and olive oil.
