Gluten-free gnocchi from sweet potatoes – pre-training meal
Sweet potatoes are a good idea to be a pre-training meal.
Why?
I recommend this type of carbohydrates because of their low glycemic index, lower than pasta (even gluten-free pasta) or simple potatoes (those are better after a workout or a match :)).
Sweet potatoes are more and more popular in Poland, though it’s not that easy to get them. I hope that it will be easier to buy them with each year. Because when healthy, they contain valuable starch, vitamins A and C, potassium, magnesium and iron. They supply us with enzymes which help to digest starch.

Gluten-free sweet potato gnocchi
I peeled sweet potatoes and baked in the oven in a casserole for 50 minutes (in 180 ºC). Then I cut them and blended. I put purée into a bowl and added other ingredients. I rolled out long piece of dough into a rope shape (a thumb thick). Next, I cut them into pieces and cut each piece slightly. I added a pinch of salt to the boiling water and some coconut oil. Finally, I put gnocchi into the water and cooked until they appeared on the surface. I served with dried chilli and roasted sunflower seeds.
It’s worth adding some cooked vegetables to this kind of carbohydrates.
