Goat’s Cheese & Olive Salad
We all have those days when you just don’t have the time. One meeting after another, a long list of things to do after work, and on top of that no idea what to eat to avoid snacking on some odd unhealthy stuff. I like to have a plan B for such situations. This could be for example an easy salad which only requires cutting and mixing the ingredients. It’s ready in no time and, what’s more, I am sure that I will eat something that serves my body and simply tastes good. That’s why I’m sharing this idea for a quick salad with goat’s cheese. Preparation:
I put the rocket into a bowl, cut the olives in half and added them to the bowl along with sun-dried tomatoes cut into strips and diced cheese. I sprinkled the salad with olive oil, lemon juice, and herbs. Ready!
