Golden Millet Porridge
Eat groats! That’s my message for you today. Millet groats plays the main part today. Let me show you a few facts about it so that you can get to know it a bit better 🙂
Firstly, you should know that millet is obtained from millet seeds, which have been grown for hundreds of years around the world. Millet has a small amount of starch (you can find it e.g. in potatoes) and is rich in well-absorbed vegetable protein, which is why people who avoid meat are so willing to eat it. It perfectly enriches our menu with vitamins and minerals, e.g. B vitamins, iron or copper. Lecithin, which is also present in millet, improves thought processes and equalizes the level of cholesterol in the blood. The big advantage is that millet is gluten-free so it is recommended for people suffering from gluten intolerance or celiac disease. The only downside is probably the high glycemic index (about 70) – that’s why people with diabetes should have it with savory dishes, rather than desserts.

Preparation:
I rinsed the groats once or twice under cold running water, then I cookes it in plant-based milk. In the meantime, I added ghee, coconut sugar and flaxseed. I cooked the forest fruit in a separate pot. Then I served the groats in a small bowl, decorated it with forest fruit, sliced banana and nuts.
