Grilled Halloumi and Almond Dressing Salad
Salads are one of my favorite dishes. Why? You can add your favorite ingredients to achieve various flavor combinations. And their biggest advantage is a large amount of vitamins, minerals and fiber, because they are based on fresh fruit and vegetables. After Christmas and New Year’s delicacies, it’s good to choose something light and filling after Christmas and New Year Eve’s goodies.
A distinct, flavorful dressing based on soy sauce, ginger and lime gives this salad a unique taste. Are you ready for this appetizing fusion of colors on your plate? 🙂
Preparation:
I cubed the pepper, cucumber and avocado, and grated the carrot. I drained the chickpeas and rinsed them under running water. I cut the cheese into slices and grilled them on both sides in a dry, hot pan.
I prepared the sauce: I mixed almond spread with soy sauce, grated ginger, lime juice, and turmeric.
I put the chopped ingredients on a plate and mixed them with the chickpeas. Then I added grilled cheese and sauce on top. Finally, I sprinkled everything with fresh coriander and sesame seeds.
