Grilled Vegetables and Ham Salad

How about spicing up your summer menu with a delicious salad with grilled vegetables?  Eggplant and pepper are a great source of fiber and vitamin C. Just like parsley which I love and use it to top my dishes whenever possible. Moreover, eggplant is rich in B vitamins as well as potassium and magnesium. So healthy! 🙂 

 

Preparation:

I cut the peppers into strips and the eggplant into slices.  I sprinkled salt on the eggplant and set it aside for a few minutes, then drained the excess water.  I heated the oil in a frying pan and grilled the peppers and eggplant on both sides.  I diced the sirloin and added it to the pan.  I put the grilled vegetables on a plate and put the fried ham on top.  I prepared the dressing by mixing olive oil with pepper, balsamic vinegar, chili, and lemon juice.  I poured the dressing over the salad and topped it off with chopped parsley.
