Mackerel and stewed kale

I recently wrote that it’s hard for me to become a vegetarian, because I can’t give up eating fish.

I don’t even want it, because fish are good for you. Fats that can be found in them are a source of polyunsaturated fatty acids and vitamin D which is are essential for us. Saltwater fish supply us with iodine as well. They should be included in our diet 3 times a week. Since fish can accumulate pollutants from waters they live in, the place of their origin should be checked. On this website: http://ryby.wwf.pl/poradnik/ you’ll find a detailed list of fish that you can buy without any risk to the environment and your health. The founders of the campaign for protecting biological diversity of seas and oceans point out the fish we shouldn’t buy, because they are in danger of extinction.

On my table today – mackerel 

I cleaned the mackerel, washed it, salted and put in the fridge for one hour. Next I baked it for 25 minutes in 180ºC. Chopped mushrooms and Kale I fried in clarified butter for a while, added cut parsnip, water, spices and lemon, and I simmered it until tender. Finally I added pumpkin seeds.

Enjoy! 😀
