Mushroom soup with a tiny hint of Asia

I tend to associate September with mushroom hunting, and if we talk about picking mushrooms then mushroom soup is a must 🙂

My recipe today is not traditional because it has a hint of Asia 🙂 If you like the taste of the Far East, then this dish is just for you.

Preparation:

Cook the chicken breast, cut it into small pieces and put aside. Pour the stock into a pot, add chopped porcini, mushrooms and a carrot. Boil for a few minutes over maximum heat. Julienne the onion and add it to the pot along with the celery and mung sprouts. Then spice the soup up, stir in curry paste, lime juice and soy sauce. At the end add the chopped chili pepper and chopped chives. Pour the soup over the meat and decorate with fresh cilantro.
