Potato Pancakes

Potato pancakes are a childhood memory, but in this recipe they come in a slightly different version. I served them with creamy coconut mushroom sauce. Don’t forget to top them off with fresh chives, as it’s rich in vitamin C and has bactericidal properties, which can boost your immune system ?

 

Preparation:

Pancakes: I peeled and grated the potatoes and the onion. I chopped the garlic, chives and dill. I combined the potatoes with the onion, the flour, the egg, stirred in the dill and chives, and added some pepper. I fried the pancakes on both sides on hot oil and transferred them onto the plate. 

Mushroom sauce: I chopped the onion and fried it on hot butter. Then I added sliced mushrooms, coconut milk and spices. I stewed it until the sauce thickened up a bit. I served the sauce on the plate next to the pancakes and sprinkled it all with fresh chives. ?
