Pumpkin Bread
Autumn days are the time when the flavours of cinnamon and pumpkin reign supreme in my kitchen. I love creating recipes that go perfectly with a cup of warm tea on chilly afternoons. This pumpkin bread is more than just a dessert – it’s both warmth and coziness in one bite. The addition of almond drink and dark chocolate provides unique delicacy, while cinnamon highlights the magic of autumn. See for yourself how easy it is to prepare something delicious for those long autumn evenings!
Preparation:
First, I preheated the oven to 180°C. In the meantime, I combined the almond drink with the vinegar and set aside to thicken. Next, I put the flour, salt, cane sugar, cinnamon, and baking powder in a large bowl and stirred. I mixed the pumpkin purée and olive oil with the previously prepared almond drink mixture. Then I gradually combined the dry ingredients with the wet ones until smooth. I stirred in the chopped dark chocolate, mixed everything gently and transferred to a baking tin lined with baking paper. I baked the bread for about 80 minutes, until a skewer inserted into the middle came out dry.
