Sometimes we look forward to some variety on our plate, some new tastes, but then we’re overwhelmed by the feeling of emptiness… What can we come up with and how can we make our meals different and still keep them healthy and tasty? How about a burger but in a veggie version? Why not! You can do anything with quinoa!
I cooked quinoa and put it in the fridge to cool. Then I diced the carrot and onion, simmered them and left to cool. I mixed the egg with the carrot and onion, added a bit of breadcrumbs and cooled quinoa, and refrigerated the whole mixture for about 2 hours. After that I formed burgers and fried them in a bit of olive oil. I served them with cream chopped chives.
