Spicy Broad Bean Salad

When cooking, we often look for inspirations that not only taste good but also bring joy to the eye. This salad is a perfect example of harmony between taste, aesthetics, and simplicity. It’s a great recipe to have as a meal on its own but it can just as well complete your dinner or you can serve it as a barbecue side dish 🙂

Not only do those beautiful colors look wonderful on the plate, but it’s also a real treasure trove of nutritional values: plant protein, unsaturated fatty acids, and fiber.

 

Preparation:

First, I boiled the broad beans until soft, then drained and peeled them. Next I chopped the pepper and dill, and pressed the garlic. Finally, I mixed olive oil with lemon juice, chopped pepper, garlic, and salt and poured the dressing over the broad beans.

I mixed everything and sprinkled it with dill and pumpkin seeds.
