Sweet Potatoes in Kale LIO Shake

Today I prepared a typical lunch from some leftover food. Do you happen to make the best dishes out of nothing? It may sounds strange  but it’s all true! I combined several ingredients available in my kitchen with Kale Lio Shake, giving them additional color and plenty of nutritional value. Delicious and colorful – both my eyes and taste buds are delighted.

 

Preparation:

I cut the sweet potatoes into cubes and cooked al dente. Then I fried the chopped onion and garlic in hot oil, added the spinach and grated ginger. Then I diced the tomatoes, put them into the pan along with cooked sweet potatoes and spices. I stewed the mixture for a while with the addition of tomato sauce. When ready, I sprinkled the dish with Kale LIO Shake.
