Tomato Gazpacho with Mint
If you are looking for an idea for a refreshing and healthy meal on summer days, gazpacho is the perfect choice! You only need a few ingredients that you probably already have in your kitchen.
On hot days, I recommend cooling the soup before serving 🙂
Preparation:
I cut the bread into cubes and poured hot water over it. I blanched the tomatoes, peeled them and cut them into cubes. I blended the soaked bread, chopped tomatoes, and pressed garlic until smooth. Then I added olive oil, lime juice, spices, and mixed everything. At the end, I decorated the gazpacho with fresh mint leaves and sprinkled with pumpkin seeds.
