Watermelon & Feta Salad with Mint

I know that in the summer you are looking for light and refreshing meals that will satisfy hunger while avoiding heaviness in the stomach and will still let you freely enjoy the weather. That’s why I suggest you put watermelon on your plates! Its main component is water – about 90-92%. Consumption of watermelon can help keep the body hydrated, which is especially important in hot weather or during intense physical activity. Apart from water, watermelon also contains valuable nutrients such as vitamins A, C and B6, as well as potassium and lycopene – a powerful antioxidant, also present in tomatoes.

You only need a few ingredients to create a delicious dish with watermelon, not necessarily sweet. It’s a great option to use mint for extra refreshment. My idea today is a combination of watermelon, feta cheese, and mint! I am sure it will be one of your favorite recipes this summer.

 

Preparation: 

I cut the watermelon and feta cheese into cubes. Then I mixed them with chopped mint leaves. I sprinkled the whole thing with pumpkin seeds. So simple and yummy!
