Spring salad with orange and avocado

Winter is really hard on us as it isn’t very eager to give us sunlight. I hunger after sun and colours so I decided to put them on my plate 🙂 

Ingredients:
  • 2 avocados
  • 2 oranges
  • 100 g of green beans (boiled al dente/canned)
  • salad greens/spinach
  • 3 spoons of olive oil
  • 2 spoons of apple vinegar
  • a few drops of lemon juice
  • a hint of cayenne pepper
  • a hint of curcuma

ORANGE AND AVOCADO SALAD

Peel the oranges and part them. Dice the avocado and sprinkle it with lemon juice. Put fruits into a bowl, add green beans, spinach, olive oil and spices. Sprinkle with pistachios.
