Eggs in Peppers and Avocado Salad
I love when my meals are tasty, nutritious, healthy, and quick to prepare all at the same time. Especially when it comes to breakfast as there’s always too little time for cooking in the morning. I know that you also often look for such easy solutions so today I am sharing the recipe for eggs in pepper with avocado salad. As I have combined eggs, avocado and a mix of vegetables in one meal, the feeling of satiety will accompany you long afterwards and it will easily last through until your next meal. What’s more, this option will be perfect for those on a vegetarian or gluten-free diet.
Preparation:
I cut two large slices of pepper and fried them in hot oil. I cracked an egg into the center of each slice, sprinkled them with spices, and covered the pan with a lid. When the egg white was set, I removed the lid and sprinkled the dish with chopped parsley. In the meantime, I diced the avocado and the remaining pepper, and sliced the dried tomatoes. I mixed the rocket with the rest of the ingredients and sprinkled it with balsamic vinegar. What a treat!
