Creamy Carrot Soup with Almond Spread & Ginger
Many people associate carrot dishes with childhood. Unfortunately, the associations are not always positive. That’s why I want to inspire you to prepare creamy carrot soup in a new version. Slight notes of chili and ginger boost the taste, and the almond spread complements perfectly the sweetness of the carrot. Carrot soup in this version is definitely far from a bland, boring, tasteless meal.
What is more, the dish is really versatile. It’s suitable for people on a meat-free or gluten-free diet. It can be served as a snack, dinner, or part of a full-course dinner. The choice is yours. 🙂
Preparation:
I diced the carrot, parsley, and potato. I cut the onion into strips, heated the butter in a pot and fried it with grated ginger. I added chopped vegetables, spices, poured water over the vegetables to cover them and cooked al dente – you can add more water if necessary. I blended the whole thing until smooth and poured the soup into a bowl. I topped it with the almond spread and fresh cilantro. It looks and tastes insane!
