Christmas Chickpea Cake

Let me show you another piece of evidence that a cake can be both tasty and nutritious! You’re already familiar with bean cakes, and now how about some chickpeas instead? A fair amount of protein along with chocolate taste. A perfect combination which I definitely recommend checking out while you’re planning your Christmas menu 🙂

 

Preparation:

I soaked the chickpeas for 12 hours in water with caraway, then I cooked it until tender. I soaked the dates in hot water for about 15 minutes. Next I melted the chocolate with coconut oil in a saucepan (I left about 70g chocolate for the glaze). After that I blended all the ingredients and transferred the mixture into a tin. I baked the cake for about 40-45 minutes at 180°C, left it to cool and melted the remaining chocolate to glaze the cake.
