Cucumber and mango soup

I love the end of summer with its wealth of fresh fruits and vegetables. So many colors, flavors and smells! So many possibilities of culinary experiments!

Recently I like to throw in one pot vegetables and fruits. Today I present one of the results of my experiments: I combined vegetables with mango. This set has a detoxifying effect. I really appreciate mango, I like it especially in cocktails before workout 🙂

Thoroughly wash the leek and cut it into slices (white part), peel and cut the onion. Simmer garlic with coconut butter. Add the peeled and cubed mango peeled and sliced ​​cucumbers. Pour 2 cups of water, stir, add the spices and cook until soft.

Mmmm… The aroma floats over the house! You mix everything and pour into bowls. The soup before serving garnish with grated coconut, cucumber and sprouts.
