Egg Salad with Mustard Dressing
Mustard dressing for salads is one of the quickest and easiest to make and gives them a distinctive taste. Remember not to be afraid of the healthy fats (olive oil, nuts or seeds) – it is not only a source of energy, but also a building block of cell membranes and a solvent for vitamins A, D, E and K. I have mentioned the importance of fats in the diet many times, e.g. HERE.
I hope that these beautiful colors on the plate will encourage you to make this salad as it’s a good option for breakfast, dinner or even a quick lunch 🙂
Preparation:
I hard boiled the egg and cut it into quarters. Next, I cut the tomato and ham into cubes, and the dried tomatoes into strips. I arranged the arugula on a plate and added all the chopped ingredients. Then I made the sauce. I mixed mustard, olive oil, lemon juice, salt, pepper and a little water (to get the right consistency). I poured the mustard dressing over the salad and sprinkled it with sunflower seeds.
