Eggs Baked with Parma Ham
I know that some of you do not like sweet breakfast and are looking for some alternatives. I’m sure you will love this recipe! Eggs baked with Parma ham offer a nice change from the classic scrambled eggs. Of course, in my version, they must be served with vegetables! If you are not a fan of spinach, you can easily replace it with arugula, lamb’s lettuce or any lettuce. It will still be delicious. 🙂
Preparation:
I lined the baking ramekins with the ham to form a basket. I cracked the eggs into each of them and seasoned them with sea salt and pepper. I baked them for about 15 minutes at 180°C. In the meantime, I chopped the spinach and mixed it with diced peppers and chopped sun-dried tomatoes and sprinkled the salad with olive oil. I served the baked eggs with the salad. It looks and tastes amazing!
