Green Omelet with Ham and Yellow Pepper

Today’s recipe is a classic in a slightly refreshed version. We will spice up the omelet mixture with some arugula, which, blended with eggs, will give the dish a unique color.

You can replace arugula with other green leafy vegetables that you currently have in your fridge (e.g. spinach or lamb’s lettuce), and use red or green pepper instead of the yellow one. Everything in the spirit of zero waste – I wrote more about it HERE 🙂

 

Preparation:

I cracked the eggs into a bowl, added salt, pepper, arugula and blended the ingredients. I heated the butter in the pan and poured in the egg mixture. When it began to firm up, I added diced ham and peppers. I fried the whole thing with the lid on until the eggs were set. I put the omelet onto a plate and sprinkled it with chopped basil.
