It’s Children’s Day Today!

Happy Children’s Day! Yes, that’s right – I wish you all the best on this day, no matter how old you are. 🙂

Adulthood is usually associated with responsibility and duties, and yet each of us has an inner child who needs spontaneity and fun. For balance, sometimes it’s worth taking care of our inner child. We need good humor, laughter, this view of the world where everything is interesting and fascinating. Why don’t we follow our kids’ example and admire the singing of birds, a leaf swirling in the wind, or a drop of rain flowing down the window. Let’s lie down on a blanket and wonder what shapes of the clouds above us remind us of.

How can we feel like a child again? Close your eyes. Focus on your breath and clear your mind of all excess thoughts. As a result, you can consciously experience beauty and goodness every day, and at the same time learn to concentrate, reduce nervous tension or achieve emotional balance. I highly recommend it!

Don’t forget to celebrate gratitude and appreciate what you have. The feeling of gratitude helps us experience joy and happiness so I encourage you to create a list of things you are grateful for to yourself and to others. It is worth expanding it and returning to it every day before bedtime. Try it yourself and see that you won’t have to wait long for the effects!

Chocolate Coconut Almond Balls


 

Ingredients:

  • ½ handful dried dates
  • ½ handful almonds
  • 1 tablespoon desiccated coconut
  • ½ teaspoon extra virgin coconut oil
  • 2 pieces dark chocolate
  • 1 teaspoon freeze-dried strawberries (optional)


Preparation: 

I soaked the dates and almonds in hot water and left them for about an hour (you can do it the evening before and leave them for the whole night). I blended the strained dates and almonds with desiccated coconut, and oil. I formed small balls and covered them with chocolate melted in a water bath. I sprinkled the balls with freeze-dried strawberries and refrigerated them for about 15 minutes.

 

Chocolate Cream with Strawberries

 

Ingredients:

  • 2 dried dates, unsulphured
  • ⅓ cup millet groats
  • ½ cup almond drink
  • 1 teaspoon dark cocoa
  • ⅓ cup strawberries

 

Preparation:  

I soaked the dates in hot water and left them for about 10-20 minutes. Before cooking, I rinsed the groats 1-2 times under cold, running water and cooked in the almond drink following the recipe on the package. I added drained dates, cocoa and blended the whole thing into a smooth mousse. I put the mixture in a bowl and added sliced strawberries on top.

 

Chia Pudding with Raspberry Mousse

 

Ingredients:

  • 1 ½  tablespoon chia seeds
  • ½ cup coconut drink
  • 1 teaspoon honey
  • 125 g frozen raspberries
  • 1 handful fresh mint leaves
  • ⅓ cup natural yogurt
  • 1 teaspoon cashew spread

 

Preparation:

I mixed chia seeds with coconut milk and honey, and put it in the fridge overnight. I blended raspberries with mint until smooth, then poured the yogurt over the chia pudding,, topped it with raspberry mousse and cashew spread.

 

Pancakes with Cocoa Mousse

 

Ingredients:

  • 1 pinch vanilla
  • 3 tablespoons gluten-free oat flakes
  • 2 eggs
  • 3 tablespoons almond drink
  • ½ teaspoon extra virgin coconut oil
  • ¼ avocado
  • ½ banana
  • 1 teaspoon dark cocoa
  • 1 pinch ground cinnamon
  • 1 teaspoon honey

 

Preparation: 

I split the vanilla pod and scraped out the seeds. I blended the oat flakes with eggs and almond drink. I heated the oil in a pan and fried the pancakes on both sides until golden. I blended the avocado pulp with banana, cocoa, vanilla, cinnamon and honey. I put the fried pancakes on a plate and topped them with the avocado mousse.
