Summer equals ice-cream :)

We are still enjoying warm summer, so let’s eat ice-cream :). Colourful, tasty and healthy, because home-made!

COCONUT ICE-CREAM MADE FROM RICE

Ingredients:

  • ⅔ cup rice
  • 1 ½ cups vegetable milk (rice or coconut will be best)
  • 1 tablespoon coconut oil
  • 2 tablespoon desiccated coconut
  • 1 handful blueberries
  • 1 teaspoon birch sugar

I cooked rice and drained it off. I put sugar, poured vegetable milk and coconut oil. I was adding desiccated coconut and blueberries while blending. Then I put it into small containers and placed in the freezer.

WATERMELON ICE-CREAM

Ingredients:

  • ½ watermelon
  • ½ cup raspberries
  • 1 tablespoon honey
  • 1 pinch vanilla
  • juice (from ½ lime)

I blended all the ingredients. Next, I poured it into ice-cream moulds and put in the freezer.
