Letcho

I love September. Almost all summer fruits are still available, and you can find fruits of Autumn on market stalls. It’s so colourful!

I decided to use all those colours to make letcho. So, there are: purple eggplant, red tomatoes and peppers of all colours. You feel like eating :). Ah, if there are so many colours on the plate, it means that we are eating plenty of healthy minerals and vitamins :).

Here are ingredients for two servings, you can double them, letcho will taste great on the next day :).

I stewed the sliced onion and squeezed garlic in clarified butter. Meanwhile, I cut peppers and eggplant into dice, then drizzled with lemon juice.
I added eggplant to the onion in the frying pan and stewed for 5 minutes. Next, I added the rest of the ingredients together with the spices. I covered it and cooked slowly a few minutes more. You can add soya sauce, but it’s not necessary, because the vegetables used have their own distinctive flavours. When the dish was ready, I poured sesame oil over it (sesame oil has a strong anti-parasitic effect).
