New Year’s Eve snack – cupcakes with coconut cream

Today sounds scary in terms of temperatures, scary because of the snow … 🙂

If you like coconut as much as I do,  these cupcakes will help you to forget about your worries and problems :)) SUCH Muffins will fit perfectly in the winter and party mood.

Cupcakes with coconut cream

Preparation:

Mix in a bowl – flour, baking soda, cocoa powder and coconut flakes. In another bowl, mix coconut oil, egg, milk and spices. Add the mixed components from the first to the second bowl, and mix again. Prepare baking tray for muffins and insert the batter. Preheat oven to 180 degrees and bake for approx. 25 minutes. Then remove from the oven and leave in a chilled place to cool down.

Coconut filling:

Keep the coconut milk can in the refrigerator for approx. 6 hours. Then separate the thick part from the water. Add vanilla and whisk with electric mixer until the mixture is fluffy. Put whipped cream on cupcakes and sprinkle with coconut.
