Pepper and Kale Frittata
A filling and healthy breakfast is key for the rest of your day. Frittata makes a good alternative to traditional scrambled eggs. You can put in your favorite toppings, this time I decided to go for kale and sweet pepper 🙂
Preparation:
I cracked the eggs into a bowl, added the spices, and whipped them together. Then I finely chopped the chives and cut the pepper into thin strips. I heated the ghee in a pan, poured in the egg mixture, added chopped vegetables, torn kale leaves and covered it with a lid. When the eggs set, I flipped the frittata and, when ready, I put it onto a plate and cut into smaller pieces.
I served it with garlic dressing made with coconut yogurt 🙂
