Most of you are probably now shocked coming back to work after the Christmas and New Year break. To make these hard moments a bit more tolerable, I created a recipe for brunch for you. It takes no time at all to prepare and all you need to do is just pack it into a jar or a lunch box and store in the fridge until you feel like recharging your batteries before the next part of a long day’s work. I peeled and diced the mango (I left a few bits for decoration). Then I put it into the blender, along with banana, chia seeds, cocoa and plant-based milk. I blended it until smooth, poured it into a jar, decorated with the toppings and refrigerated for 3 hours. A bit of chocolate and some Strawberry Spread will add a sweet note to the pudding.
