Trout baked in parchment paper
Trout is one of my favourite coarse fish. It’s accessible in Poland, we can buy it in almost every fish shop.
The only problem is to find a delicious and fresh fish. To make sure it’s fresh we need to, literally, look the fish in the eye. If the eyes are cloudy – it means it isn’t fresh. Very often fish in malls is frozen so it’s better to prepare it immediately instead of freezing it again.
Today’s recipe is perfect for Christmas as it is both yummy and good-looking. It’s easy to make so give it a try. Add some Christmas decorations, like a Christmas tree stem and voilà 🙂
Put olive oil and all the ingredients into a bowl. Clean the trout carefully and score it (‘X’ shape). Season it, both inside and outside and put the lemon inside (such amount won’t be harmful when combined with protein). Place it on parchment paper, put thyme inside and tie it with a regular string (like in the picture).
Bake it for about 30 minutes, in 180 degrees.
Take it out of the oven and leave on a plate for about 5 minutes.
You can serve it with lettuce and lemon.
