Quinoa with spring roasted vegetables

The spring is in the air 🙂

I love the time when everything wakes up, and the outdoors is green. Of course, the most important is the fact that the vegetables appear on the market! ..spring vegetables :))))

As always, I suggest to use the fact of seasonality and buy fresh products, available at the time of the year. I know that it is not always possible, but if it is we should use it as much as possible 🙂

Today recipe for quinoa with roasted vegetables.

Quinoa with spring roasted vegetables

Preparation:

Wash all the vegetables thoroughly. Slice carrots and sprinkled with olive oil,add salt and pepper. Preheat the oven to 180 degrees and bake it for about 15 minutes.

In the meantime slice the zucchini and onion . Sprinkle with olive oil and also place in the oven for about 10 minutes. Wash the radish, sprinkle with oil, split the broccoli and fry it on the water in a  pan, until they are slightly soft.
Place all baked vegetables in a large frying pan together with cooked broccoli, spices, cherry tomatoes and cooked quinoa. Cook for a moment, and at the end add fresh basil.
