RASBERRY & SPINACH LIO SHAKE COCKTAIL

Why spinach? Because these small leaves contain a lot of vitamins and minerals, including potassium, magnesium, vitamin K, carotenoids, and folates. The latter help skin stay healthy, protect the eyes against oxidative stress, and lend a hand in detoxifying the body.

As for how to approach spinach culinary-wise, we’ve finally started getting along with raw spinach. Other than that, methods of preparing this vegetable the way it’s done in French or Italian cuisine have also gained popularity. Thus, we can finally enjoy the great taste of this plant to the fullest.

Oh, and we cannot forget about iron. Although its content in spinach is not as high as it was once thought, it still remains a good source of it. Additionally, when we eat spinach, we provide our body with tryptophan, which is necessary for the formation of serotonin.

Spinach is not, however, recommendable to everybody. It contains a large amount of oxalate, which should be avoided by people with kidney stones, and because of its high level of purines, a person suffering from gout should also try to steer clear of it.

So, if you don’t belong to any of the categories mentioned above, today I’d like to suggest a raspberry & spinach cocktail.

What is lyophilization?

Lyophilization is a process of direct removal of water from the pre-frozen product, so that the ice does not pass through a liquid phase. Whereas the standard drying is carried out using high temperature which destroys a substantial part of the product’s nutritional value. The use of lyophilization or freeze-drying helps to keep most of the vitamins, minerals, enzymes, and the like, contained in the fresh product. Lyophilized products also have a similar color, shape and taste, when compared to a fresh product. At present, freeze-drying is one of the best methods of preserving food that does not require adding any artificial substances.

The finished product contains only 1 to 2% of water which makes it very light.
