Roast Chicken & Zucchini Pancakes

What to have instead of traditional fried chops? If you’re looking for a lighter alternative for your stomach, this is the recipe you should go for. Roasting is a great method of cooking, recommended by experts who developed the Polish Recommendations for Healthy Nutrition. One of the important points that has found its place next to healthy nutrition is replacing frying and grilling with boiling (including steaming), stewing, and roasting.

 

Preparation:

I grated the zucchini and drained excess water. I mixed the zucchini with meat, egg, flour, and spices. I formed flattened pancakes from the mixture and placed them on a baking tray lined with baking paper. I roast the pancakes at 180°C for about 20 minutes.

In the meantime I rinsed the groats under cold running water and cooked following the recipe on the packaging. I cut the tomatoes in half and chopped the basil. Next, I mixed the groats with the tomatoes and basil,and sprinkled it with olive oil.

I served the pancakes with the groats 🙂
