Snowy Christmas Muffins

We can feel the Christmas spirit everywhere. Holiday preparations are at full steam now and soon the smell of Christmas dishes and spices will fill all kitchens. If you don’t know what desserts to serve this Christmas, here I am to help you 🙂 I have one more recipe for a Christmas dessert: snowy muffins 🙂

 

Preparation:

I peeled and diced the apples. I melted the clarified butter in a saucepan. I combined all the dry ingredients in a bowl. Then I separated egg yolks and egg whites. I whipped the egg whites and mixed the yolks with the sugar. I combined all the ingredients and transferred the mixture into muffin moulds and sprinkled them with coconut sugar to make them crunchy. I baked the muffins for about 25-30 minutes at 180°C.

I whipped the cold coconut milk with caster sugar (it’s best to use the white part of the milk only). I decorated cooled muffins with the cream. As a final touch, I sprinkled the muffins with desiccated coconut.
