Beetroots are a great source of B vitamins, especially folate, and potassium, phosphorus and iron. We also benefit from the pro-health properties because of the presence of nitrates, which are converted into nitric oxide in the body. This time I will propose a soup made from baked beetroots. Soup with baked beetroots and ginger
Preparation:
Preheat the oven to 220 degrees. Wash the beetroots, sprinkle with oil and place them in the oven, wrapped in baking paper. Bake for about 1 hour. Peel off the skin after baking.
In the meantime blend the onion and ginger, place it in a hot pan with ghee butter and simmer. Add beetroots and mix again. Add broth, water and cook. Then add spices and a few drops of lemon. Pour into bowls and add coconut cream (or another vegetable product)
