Spread with Roast Vegetables
Need some ideas for your lunchbox? How about a quick, simple curd cheese spread with the addition of roast vegetables? You can prepare it the day before, eat some for dinner, and pack the second portion into your lunchbox. Top it off with a bit of healthy fats in the form of pumpkin seeds, add some bread, sprouts (which are a real wealth of nutrients, more about it HERE), fresh cucumber and … ready!
Preparation:
I cut the carrot, parsley, and celeriac into smaller pieces and roasted them at 180°C until tender and left them to cool. I mixed the curd cheese with yoghurt, salt, pepper, and Provencal herbs. I chopped the vegetables into small pieces, added them to the spread and thoroughly mixed the whole thing again.
I sprinkled the paste with pumpkin seeds, served with fresh cucumber, radish sprouts and bread 🙂
