Sun-Dried Tomato & Cilantro Omelet

I love to create something special with simple ingredients and this omelet is the best example! Sun-dried tomatoes add an intense, slightly sweet flavor that goes perfectly with aromatic basil and fresh cilantro. Coconut flour makes the omelet more delicate and fluffy, and almond drink adds a subtle, slightly nutty note.

Preparation:

First, I cracked the eggs into a bowl and mixed them with coconut flour, almond drink and spices: salt, pepper and basil until smooth and slightly fluffy.

I heated the coconut oil in a pan and then poured in the egg mixture. I cut the dried tomatoes into cubes and immediately added them to the top of the omelette.

I fried it on medium heat until it started to set and then gently flipped it over. After a few minutes, I transferred it onto a plate, folded it in half and sprinkled with fresh, chopped cilantro – it gives this dish such a unique flavor.
