
Thai Shrimp Soup
This shrimp soup is a real gem for special occasions, such as Valentine’s Day. I love its delicate coconut milk flavor combined with the distinct notes of chilli and ginger. It warms you up, delights with its aroma and is always impressive. This is one of those recipes that is quick to prepare, and the effect amazes everyone. It is perfect for a dinner for two, when we want to highlight the special time spent together without having to spend the whole day in the kitchen.
Method:
First I prepared the ingredients – I cut the onion into strips and the pepper and zucchini into cubes. I heated the oil in a pot and fried grated ginger, pressed garlic and finely chopped chili pepper until the aroma filled the entire kitchen. Then I added the prawns and fried them for about 3 minutes until they took on a beautiful color. I poured in the coconut milk and broth, seasoned everything, and finally added the vegetables. I cooked the soup for long enough for the vegetables to be slightly crispy but soft inside. When ready, I poured the soup into bowls, sprinkled with chives and served immediately – full of flavor, creamy and simply delicious!
