White & Blue Coconut Pudding

This is the kind of breakfast I like the most as it’s varied, delicious, and healthy!

You can prepare it the night before and enjoy a nutritious first meal for a healthy start to your day 🙂

 

Preparation:

I blended the yogurt with agar and xylitol, then brought it to the boil, stirring all the time. I set the pan aside to cool. Then I poured half of the mixture into a jar and topped with muesli. I added blue spirulina to the rest of the mixture (you can also use green spirulina or green Lio shake). I poured the blue mixture over the granola and refrigerated the pudding for about 1 hour. When ready, I sprinkled the pudding with desiccated coconut. That’s it! 🙂
